Baked Strawberry Doughnuts



Since the fall, I've been on a baked doughnut kick.  I just love them.  They are so easy to make and hit the spot for when I get the urge to have something sweet for breakfast.  I recently decided it was time to experiment with new flavors and whipped up what might be my favorite flavor yet--melt in your mouth strawberry. I hope you enjoy!


Ingredients

for the donuts

  • 2 cups of all purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup milk (I used skim, because that's what was in my fridge)
  • 6 tablespoons of vegetable oil
  • 1 tsp vanilla
  • 2 eggs
  • Make sure you have a donut pan

for the glaze

  • 3 cups of powdered sugar
  • 1/2 cup finely chopped strawberries
  • 1/2 cup freeze dried strawberries, crushed into a powder (I put mine in a plastic baggie and used a glass to crush them)
  • 1 tbsp water

Directions

  • Preheat oven to 375 degrees Fahrenheit.
  • Prep doughnut pans with Baker's Joy (I love this product because you don't have to worry about flouring your pans since it's already in the spray!!!)
  • In a large mixing bowl, combine all dry ingredients.
  • In a separate bowl, mix wet ingredients.
  • Combine dry and wet ingredients together, mixing until combined.  If you are using a mixer, use low setting as you don't want to over mix.
  • Slowly add strawberries to mixture.
  • Stir until combined. Again, if using a mixer, use a low setting to avoid over mixing.
  • Place batter in a ziplock bag and cut off the tip to fashion a piping bag.  (I usually put the bag in a glass and scoop the dough in)
  • Bake for 10-13 minutes until toothpick inserted into doughnut comes out clean.
  • Allow to cool on a baking rack while you prepare strawberry glaze.
  • To prepare glaze--in a mixing bowl, combine the chopped strawberries and the powdered sugar.
  • Mix until combined, macerating strawberries to add moisture to the mixture.  
  • Once this mixes down, add freeze dried strawberry powder and stir until combined.
  • Add 1 tbsp water to give mixture a glaze-like consistency.
  • Dip doughnut in glaze and place on wire rack.  Let the Doughnuts sit for 5 minutes to allow the glaze to set.
  • Enjoy!

One day I will blog regularly...

One day I will blog regularly.  I swear.  I could sit here and give you a million excuses about why I haven't been blogging, but mostly it has been because I've not been feeling my best.  As I have mentioned in previous posts, I have a chronic pain condition called Interstitial Cystitis.  The degree to which it affects my life ebbs and flows, but lately we've been in a bit of a rut as one of my medicines stopped working around Christmas.  Luckily, I've gotten an appointment in March with a doctor who is sought after all over the country by IC patients and I can't wait to hear what he has to say about treatment options!  

So without further ado, this Five on Friday is a glimpse into my life via my iPhone the last few weeks!

ONE 


My bestie Allison is getting married and had the ingenious idea to have her bachelorette party at Disney World.  I was a little hesitant at first because I'm terrified of roller coasters, but I LOVE rides!  After defeating the 7 Dwarves Mine Train (AKA a baby coaster), I can say that I've checked roller coasters off of my to do list for the next 10 years and will stick to my kiddie rides (though I would like to humble brag that I rode the Mine Train 3 times and once with hands up....hahahaha!) 

PS--if you are ever at Disney...be sure to dress up like a Princess.  The workers will call you your highness all. day. long. and it is amazing.

Since I haven't been feeling 100% due to IC, I'm basically operating Farm to Fête from my bed a few nights a week.  Due to this, Muffin has taken to wearing an eye mask in his sleep.  He doesn't understand why the dogs and I find it completely disturbing.

I got to meet my goddaughter this week and it was probably one of the most amazing experiences of my life.  It was so hard to only meet her via pictures for these first months since she was born!  Miss Lula is an angel baby...I could just eat her up I love her so!

I celebrated my 29th birthday this week.  I can't believe it is my last year in my 20's!  It was a quiet birthday filled with godbaby snuggles, cupcakes, and champagne with family.  It was just what I needed to ring in my next year of life!
